Southern Pound Cake

Ingredients

  • 3 cups all purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups unsalted butter (room temperature)
  • 3 cups fine grain sugar (baking sugar, not powdered)
  • 5 large eggs
  • 3/4 cup whole milk
  • 1 tablespoon pure vanilla extract
  • 1/4 teaspoon lemon extract

Instructions

  • Preheat oven to 325F. Grease a bundt pan (or two loaf pans) with shortening and lightly coat with flour.
  • In a large bowl mix flour, baking powder, and salt.
  • In another bowl, cream butter with sugar until fluffy.
  • Add eggs one at a time to butter mix and blend just until combined. Add vanilla and lemon extracts.
  • Add milk to wet mix and combine. Add dry mix to wet mix a little at a time until fully combined.
  • Bake for 70 minutes, until the toothpick test is clean.
  • Cool until just warm and remove from pan. Serve with whipped cream and fruit of choice.
